Thermostat temp

The Ford service manual recommends a 195-degree thermostat. My cars are rarely driven in cold weather I am wondering if I should use a lower temp thermostat.

No.  That temperature for the thermostat is designed to keep the engine operating at an efficient temperature, more efficient than at 180 or 160*.  That said, it is hard to find a 195* themostat.  Most everyone (non-concours) uses a 180*.
Remember: the thermostat temperature is designed to set the operating temperature floor of the engine with a good, well functioning cooling system.
