The ones I got in my AMK kit for our 68 GT350 were oval head Philips black oxide finish. Our unrestored 68 HCS has the oval head Philips with a chrome finish, this car was built in the San Jose plant.
The 68 Shelby assembly manual calls for a 53039 S-2 screw #10-16x 3/4 # 8 head.

I discovered at the KC MCA national that the scoop screws were part of some of the hardware that was hand touched up with body color once it was installed.
Hope this helps.

So is the expectation for the quarter scoop screws to be touched up with exterior color paint?

Yes that is my understanding. Same for the carriage bolts in the grill area.

Yes and some original paint examples. Four different cars

Left hand example is in the unrestored picture thread section

I believe screws got painted if paint chipped when screw went in (which was often )  Seen too many examples of with/without. Same for carriage bolts. Knowledgeable judge wouldn?t deduct for either. Original scoop screw were chrome

It also looks better painted. The same goes for the carriage bolts in the grill.

There are actually AOSmith directions to paint the carriage bolts for the front end assembly.

Out of all the 68 Shelby's built I would be surprised if some were not missed. The Smith workers were humans after all. I believe many of the ones that are found not to have paint on them was because of painting over the slick, plated , unprimered surface of the carriage head bolt. Over time rubbing from cleaning, vibration etc. cause the paint to easily flack off.
