Where do I find information on correct interior options like seats, steering wheel, door panel as well as correct painting of hood, trunk, wheel, along with correct suspension and exhaust for the proper restoration of my Dearborn built 69 GT 351w ?

There is no easy button, no book or guide that will tell you all of this information. New information is being uncovered every day, new products are coming on the market while others we have relied on go away almost as often.
Not sure of your amount of exposure, abilities, time, dollars available, space and so on but start reading posts to get an idea of different things are being done so that you can get an idea of a goal (how far you want to take the car) you can establish at the beginning and use as a guide post through the whole process. Get a true evaluation of the cars current condition and how complete the car is and as mentioned above a honest evaluation of your skill level (what you can do and what will need to be subbed out) dollars available, time, space and the other things mentioned.
Plenty of guidance here gained by doing things right and making plenty of mistakes over the decades. Listen and learn from our mistakes and don't think that for some reason your situation is that different from what others have faced. In the end, if you follow along, you can reach your goal
IMHO the best place for information is a well maintained and participated in forum that is focusing on the same thing your looking for. Only way to share, read and see the latest info in a peer review situation.
