65 289 warning light oil sensor

1965 coupe, SJ 15MAR65 build, 30MAR65 build date of car. 5R07C (Warning lights) Just purchased from original owner (SEP2017)-- he was 80.. I'm taking the car back to original. The PO ran a piece of NPT copper pipe out from the block to attach the sensor. The car has power steering. Q: does/can the sensor screw right into the block? Why do i need the hex extension piece?

If your car has the warning light instrument cluster like you say then yes, the low oil sensor screws right into the block where the current extension is.  The extension was only used on the 5 dial instrument clusters with the oil pressure gauge and a different type of sensor used on the end of the extension.
