What color would the hood latch for June 1964 - 64.5 built in Dearborn?

Would the entire assembly have been black?

not black. it was phosphate & oil.

Here's how I "restored" mine on my '64.5 coupe. The catch and attaching hardware is P/O, the pin is zinc Dichromate. I'm not 100% sure if the washer on the Pin is P/O but I did mine that way.

Almost all the hood pins I've removed from Mustangs had a clear zinc finish, at least on the threads. The threads were hidden by the hex nut and the threaded insert in the hood. Almost all the San Jose built Mustangs hood pins I've seen used a chrome plated washer, thinner and with a larger diameter.

not black. it was phosphate & oil.

Not quite, the steel was more natural (a light phosphate), the spring was darker from its heat treatment and the actual "catch" (the part that moves inside that grabs the pin) appears to be stainless, or at least had a shiny finish

I was actually referring to the hood latch assembly and not the hood latch pin because some of the images I pulled up during my search appeared to have some of the parts darker than other parts and I was unable to tell if they were black or just darker phosphate coating.

Definitely phosphate/oil.  Remember that manganese phosphate is darker than zinc phosphate.  The 2 types were generally interchanged.  Also, as mentioned, some pieces of an assembly may be a different shade of phosphate, like the springs on the latch.

I did my parts in phosphate and oil (see photo). Afterwards, in looking at photos in the unrestored cars section,
as well as in the thread here:

it looks like some of the latch assembly is in a semi-gloss black. It seems that the sections of the assembly where I put the arrows were the black and the rest was the lighter phosphate. Am I wrong?

The two parts you indicated with red arrows are semigloss black. They may have been dip painted which leaves a different sheen and drips than with spray.

Part of the communications challenges on the internet and through the printed word. Many/most would not refer to those parts as the latch but instead the latch support or brackets as illustrated in that last link I showed in my earlier post.  Those two formed sheet metal pieces were a semi-gloss black

This is one reason pictures can often clarify and reduce misunderstandings
