Has anyone ever compiled a list of correct factory finishes for all, or any, of the various parts on the 67 Mustang?

The MCA rulebook is a general guide that calls out a lot of finishes, but it is by no means complete.  Most that have started down this path have found it to be a major undertaking to document just one assembly plant during one part of a production year.

The MCA rules is a start but the whole car (to my knowledge) has not been done.

Are you thinking of doing one?

Saw an effort once for 66 Dearborn Mustangs and the book was about three inches thick with item descriptions and specs.
