What are the options for refinishing the trunk latch and striker?  My striker has some dull coating on it.

The striker can be replated but the latch - best to find another in better condition. Taking them apart and refinishing them can be a challenge and good galvanizing is hard to get done

Ford serviced a bunch of the latches, can usually find NOS if needed, although if you sweet talk Jeff, he might be able to find you a nice original out west!

I haven't unburied the latch yet so I don't remember its condition.  On the striker what type of plating does it receive? Zinc maybe.

Yes, just regular ol' clear zinc plating.
