Hello there,
I am helping a friend restoring a San Jose 67 Fastback High Country Special with a Parchment interior. Question is: what color should the headliner and carpet be? Black / Parchment?
Is there a list of interior items colors like in 66?

Clues is about all I can come up with. NPD has a Parchment headliner listed (HF-50-D, $52.31) so apparently it exists. Whether it's "legitimate" or not, I'll let others answer.
