Ford Car Parts (aka MPC), 75 ed, section 86.1, says you need Ford Locator Code number JC-607 (service number C9PZ-8620-DE) a 1/2 inch wide, 60 7/8 "long" belt. Check your lower pulley diameter too. The outer sheath (of three) should be a smaller diameter than the two inner ones.
(The 1966 Ford Products Engine Equipment - - (AM0156 pg76) shows double inner belts, and the outer (A/C and smog) as C6ZE-8620-C, 1/2 X 60.00 inch, but that number does not appear in the MPC.)

Mannel's Ford Small Block V8 book (sections 6K20, 7K21) suggest that the 1966 and 1967 Mustang 289 with AC and T/E engine configurations were very similar.
I went through this belt-fitting exercise a while back for my 1967 coupe (signature car below). A reproduction C7ZE-8620-C belt available from NPD and Marti Parts (Item number 8620-94) is the correct Smog + AC belt. I believe C6ZE-8620-C would be the same part (?). A Gates Green Stripe 9620 XL belt was on the car before, and would be interchangeable. Both Gates and 8620-C belts measure 1/2" x approx. 60".

been down this track a few times with mixed results on the MARTI repo's so i went one step further and bought genuine examples only
the correct belt i have used several times on CONCOURS restored cars has been marked/embossed with C6ZE-8620-C2. i bought several NOS versions many years ago and only have 2 left now.

Excellent foresight, and a nice find!
